Chili Recipes for the Winter Forecast from Chef Dave



Chili recipes are on the menu because Chef Dave knows what you crave! So just in time for the winter blues, he’s whipped up two satisfying favorites, Tex-Mex Chili and White Bean Chicken Chili.

Chili and its true origins are certainly a point of contention. Just consider the numerous contradicting accounts of how it came about: American Indians? Texans? The Spanish? Canary Islanders? No one knows for sure, but everyone has their favorite recipe.

Chef Dave Fouts is no exception. Even after having bariatric surgery in 2002, he has pursued his love of cooking, modifying his favorite recipes along the way so he could continue to enjoy food and cooking as his goals – and shape – changed. Today he is 200 pounds lighter, and the world’s first “bariatric chef”.

In the lastest episode of Eating Right Every Bite, Chef Dave re-introduces fans to an old standard: Tex-Mex Chili. By incorporating ground turkey in place of beef, Chef Dave shows you how to save calories and fat without sacrificing great taste. Plus, it’s a dish that encourages watching portion sizes, as the leftovers get better each passing day!

You can also try a variation on the classic red chili with Chef Dave’s recipe for White Bean Chicken Chili, which brings the heat with pepper, cumin and jalapenos, and finishes with tangy lime juice and cool cilantro.
