Chef Dave Fouts Goes Tex-Mex with Chicken Chiladas Recipe

Chef Dave Fouts cooks up some easy Tex-Mex favorites that are low in fat and big on flavor in the latest episode of Eating Right Every Bite. Try one of his salsa variations or some creamy Chicken Chiladas!

Chef Dave makes Tex Mex favoritesIn the latest episode of Eating Right Every Bite, Chef Dave makes some hot Tex-Mex favorites, including Chicken Chiladas, featuring non-fat cream cheese instead of sour cream, for a low-fat twist. Plus, learn to make a savory garlic cilantro salsa, and of course, a cool and creamy smoothie to wash it all down.

Chef Dave is a seven year post-op gastric bypass patient who travels around the country teaching those who have had bariatric surgery how to eat and enjoy life without overindulging.

“When an obese person makes the difficult decision to have bariatric surgery, there is usually a misconception that food will no longer be enjoyable,” he writes on his Website at ChefDave.com.  “This could not be farther from the truth and in fact, is a widely believed myth among patients awaiting their surgery date. Eating will always be a part of our lives, and learning to eat in moderation and focusing on new and different aspects of life, instead of food, will take some getting used to.”
